Easy Steps to Cook Chana Pulao and Mutton Curry
Pualo and mutton curry are the most famous non-veg cuisines that are being savored across India.
Birthdays parties, marriage buffets or any celebration would not be completed if mutton curry and pulao are not in the menu.
Here is an easy step by step process to cook Chana Pulao and Mutton Curry.
Requirements to prepare Chana Pulao:
- 250gm Jeera rice,
- 50gm Chick Peas (kala chana),
- 2 tablespoon ghee,
- Spices (2inch cinnamon, 3 cloves, 3 eliche, 1 bay leaf, 1 red chili, 1 green chili, 3 cardamom, 1 onion slice cut
- 1 tablespoon ginger garlic paste,
- Sugar and salt as per taste.
Requirements to prepare Mutton Curry:
- 500gm mutton (curry cut),
- 2 potato & 2onion (large),
- Margination Paste – ginger 1 inch, 2 garlic, ½ onion, 2-3 green and red chili, 2 tablespoon curd
- 1 tablespoon turmeric,
- 2 teaspoon salt (as per taste),
- mustard oil 3 tablespoon,
- 1 bay leaf,
- 1 red chili,
- Panch phoron (fenugreek seed, nigella seed, cumin seed, black mustard seed and fennel seed),
- Spices (½ teaspoon each coriander, red chili and cumin powder)
- Garam masala 1 ½ teaspoon.
Steps to prepare Chana Pulao:
1. Soak chana overnight.
2. After washing soak Jeera rice for 10-15mins.
3. In the 5 liter pressure cooker heat the ghee (at low flame) and add all the spices, put the sugar and red chili powder.
4. After that put the onion slices, add salt and fry till golden colour appears.
5. There after add soaked jeera rice and chana on top of it.
6. Keep churning the rice and chana with the spices and oil till the colour of the mixture turns golden brown.
7. Add one glass of warm water to it and place a lid of the cooker.
8. Cook it at medium flame till one whistle goes. Do not open the lid of the cooker till the pressure fades away.
Your Chana Pulao is ready.
Steps to prepare Mutton Curry:
1. Marinate the mutton with the paste and spices overnight.
2. Heat mustard oil at medium flame in a pan and fry the potatoes (speared with turmeric and salt) for 10 mins.
3. After the potatoes are cooked, take them out and as per requirement add oil, bay leaf and red chili into it, add 1 teaspoon sugar and red chili powder plus the onion slices and stir it for 2 minutes till golden colour appears.
4. Add the marinated muttons and panch poran and fry the combination well.
5. Sauté the mutton for 30mins and then add the potatoes in it and mix it well with garam masala.
6. As you cook the mutton keep adding warm water bit by bit into the curry.
7. Place a lid over the pan and let the mutton curry cook at medium flame for another 20mins and you are done.
Your mutton curry and chana pulao is ready to be served.
